Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Cauliflower Rice

Cauliflower rice is a quick and tasty rice dish. It pairs well with any simple raita. It is ideal for lunch box too.

Ingredients:
1 medium size cauliflower
1 big onion
7-8 garlic pods
1 inch ginger
2 cups basmati rice
3 table spoon oil
2 bay leaves
1 tea spoon jeera
 1 tea spoon garam masala powder
1 tea spoon red chili powder
salt to taste

Preparation:
1. Wash and soak the rice for half an hour.
2. Cut the cauliflower into medium size florets
3. Heat 1 table spoon oil in a pan and add the cauliflower florets and cook on low flame till brown. Do not over cook the cauliflower. Set aside
4. Finely chop the onion
5. Make a paste of ginger and garlic
6. Heat oil in a cooker pan, add bay leaves and jeera.
7. When jeera splits add finely chopped onion and saute till transparent.
8. Add the rice and saute for a minute.
9  Add garam masala, chili powder and salt .mix well
9. Add 21/2 cups of water,cover and cook till rice is done
10. Add the cooked cauliflower ,mix well .
11. Serve hot with any raita
