Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Bruschetta

Bruschetta is a simple Italian appetizer. It is a kind of open sand witch. The extra virgin oil adds to the taste and flavour. I recently served this as a starter in a party  and it was all gone even before I knew !!!!


Ingredients:
1  loaf french / garlic loaf
1/4 cup finely chopped capsicum
1/4 cup boiled sweet corn
1/4 cup finely chopped onion
1/4 cup finely chopped tomato
1/2 tea spoon garlic powder
1/2 tea spoon dried basil
1/2 spoon chipotle
1/2 cup extra virgin oil
Salt to taste
1 1/2 cup mozzarella cheese


Preparation:
1. Slice the garlic /french bread
2. Smear extra virgin olive oil on the slices
3. Mix capsicum, onion, tomatoes, sweet corn, garlic powder, basil, chipotle and salt 
4. Arrange the bread slices on a baking tray and spread the capsicum mixture on each slice.
5. Garnish each slice with grated mozzarella cheese
6. Bake in a pre heated oven till the cheese melts and bread slices become crisp
7. Serve hot
