This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Bitter Gourd Mango Curry

                                                  Bitter Gourd Mango Curry                                                                    
Bitter gourd mango curry is a nutritious dish that goes well with rice and roti.  Raw mango adds to the taste of the curry. This recipe is sweet, sour, spicy and little bitter !!!!


Ingredients:
6 bitter gourds
2 onions
1 raw mango
1 table spoon jaggery
1 tea spoon red chili powder
1/2 tea spoon ajwain
1 strand curry leaves
1/2 tea spoon haldi
2 table spoon oil
Salt to taste

Preparation:
1. Lightly peel the bitter gourds , discard the seed and cut into long pieces
2. Put the bitter gourd pieces in a microwave container ,add enough water to soak the pieces ,salt and microwave for 10-12 minutes
3. Cool and squeeze the pieces by pressing between the palm to remove all water and set aside
4. Finely chop the onions
5 Peel and grate the raw mango
6. Heat oil in a thick bottom pan, add ajwain, curry leaves and haldi and saute for a minute.
7. Add onions, and saute till onions turn transparent
8. Now add the grated mango, jaggery, red chili powder and salt and saute for two minutes.
9. Add the cooked bitter gourd pieces and mix well.
10. Cook covered on a low flame till oil leaves the sides of the curry
11. Serve hot with rice or roti.
