Sweet Potato Curry |
Ingredients: (Serves three)
6 medium sized sweet potatoes
2 tea spoon red chili powder
1/4 tea spoon hing
1 tea spoon mustard
2 strands curry leaves
1/2 tea spoon haldi
1 table spoon kasoori methi
2 table spoon oil
Salt to taste
Preparation:
- Wash, peel and chop the sweet potatoes into small pieces
- Heat oil in a pan and add mustard, curry leaves, hing and haldi
- When mustard splits add the chopped sweet potatoes
- Sprinkle 1/4 cup water, salt, red chili powder, cover and cook till sweet potatoes are cooked (do not over cook the sweet potatoes)
- Add the kasoori methi, mix well and put off the flame
- Serve with rice, roti or naan
