Maharastrian Varan |
Varan is a very healthy, homely food . It is a light and easy dish prepared using tuvar and moong dal. Varan along with steamed rice makes for a comfort food.
Ingredients: (serves three)
1 cup tuvar dal
1/4 cup moong dal
2 table spoon freshly grated coconut
3 green chilies
2 pods of garlic
1 tea spoon jeera
1 tea spoon haldi
Salt to taste
1/2 cup finely chopped coriander leaves
For Tadka
1 table spoon ghee
1 tea spoon mustard seeds
1/2 teaspoon hing1 strand curry leaves
Preparation:
- Wash and soak tuvar dal and moong dal together for half hours time
- Blend green chilies, jeera, coconut and garlic to a fine paste
- Add haldi to the dals and pressure cook for three whistles, adding twice the amount of water
- When pressure dies down open the cooker lid and mash the cooked dal lightly
- Heat the ghee in a pan and add mustard, curry leaves, hing.
- When mustard pops add the cooked and mashed dal, ground coconut masala, salt and bring it to a quick boil. Adjust the consistency of the dal by adding water as per your liking
- Garnish with coriander leaves
- Serve with hot steamed rice
