Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Badam Phirni

Phirni is a rich creamy dessert made with rice and milk. This dessert is authentic to the state of Punjab. It is usually made during festivals.  It is served  hot or chilled.

Ingredients: (serves three)
1 3/4 litre milk
2 table spoon basmati rice
4 table spoon almond flour/meal
5-6 strands of saffron
3-4 elachi (cardamom)
1/2 cup cream
Sugar to taste
For garnishing:
1 table spoon of chopped pista
1 table spoon of chopped almonds

Preparation:
  1. Wash and soak basmati rice for an hours time
  2. Soak the saffron in 2 table spoon  milk
  3. Powder elachi
  4. Drain and grind the soaked basmati rice to a fine paste adding milk for grinding.
  5. Heat the remaining  milk. When milk comes to a boil add the ground rice paste, lower the heat and keep stirring to avoid formation of lumps
  6. When the mass turns creamy, add the almond flour and mix well (add more milk if the mixture is too thick)
  7. Add the sugar and keep stirring till all the sugar is completely dissolved
  8. Add the cream and mix well
  9. Add the milk soaked with saffron
  10. Add the elachi powder and mix well
  11. Put off the flame and garnish with chopped pista and almonds
  12. Serve hot or chilled
