Badam Phirni |
Phirni is a rich creamy dessert made with rice and milk. This dessert is authentic to the state of Punjab. It is usually made during festivals. It is served hot or chilled.
Ingredients: (serves three)
1 3/4 litre milk
2 table spoon basmati rice
4 table spoon almond flour/meal
5-6 strands of saffron
3-4 elachi (cardamom)
1/2 cup cream
Sugar to taste
For garnishing:
1 table spoon of chopped pista
1 table spoon of chopped almonds
Preparation:
- Wash and soak basmati rice for an hours time
- Soak the saffron in 2 table spoon milk
- Powder elachi
- Drain and grind the soaked basmati rice to a fine paste adding milk for grinding.
- Heat the remaining milk. When milk comes to a boil add the ground rice paste, lower the heat and keep stirring to avoid formation of lumps
- When the mass turns creamy, add the almond flour and mix well (add more milk if the mixture is too thick)
- Add the sugar and keep stirring till all the sugar is completely dissolved
- Add the cream and mix well
- Add the milk soaked with saffron
- Add the elachi powder and mix well
- Put off the flame and garnish with chopped pista and almonds
- Serve hot or chilled
