This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Nippattu

Nippattu is a savoury, spicy, crunchy snack that is an excellent accompaniment with hot coffee or tea. There are many variations of nippattu recipe that vary from family to family

Ingredients: (Makes 25-30)
2 cups Rice Flour
2 tea spoon ured dal flour
3 strands curry leaves finely chopped
1 tea spoon black pepper coarsely powdered
1 table spoon roasted peanuts coarsely powdered
1 table spoon til ( sesame seeds)
1/2 tea spoon hing powder
2 table spoon hot oil
1 tea spoon chilli powder
Salt to taste
Oil for frying nippattu

Preparation:
  1. Grind the urad dal in a mixer to a fine powder and sieve
  2. Put the rice flour and urad dal in a pan, mix well and roast on  a medium flame for 5 minutes
  3. Take this roasted flour in a bowl and add curry leaves, til, pepper powder, peanuts, hing, chilli powder,salt and mix well.
  4. Add the hot oil and mix well
  5. Knead a stiff dough adding required quantity of water
  6. Rest the dough for 15 minutes
  7. Heat oil for frying nippattu
  8. Make balls from the  dough of medium lemon size and flatten it on a poori press or press it on to your palm or parchment paper to make flattened  small circles.
  9. Prick the nippattu using a fork in two or three places to avoid puffing of nippattu
  10. Fry the flattened nippattu in hot oil by putting not more than 4 nippattu at a time
  11. Fry till golden brown  on both the sides and remove on to an absorbent paper
  12. Store in airtight container
  13. Stays fresh and crispy for 10 days
  14. Serve with hot tea/coffee
