Aloo Methi |
The combination of potatoes and fresh tender home grown aromatic methi leaves is a winning combination. Serve this with hot pulka and observe your family members licking their fingers!!
Ingredients: (serves four)
Aloo 500 gm
Methi leaves 250 gm
1 tea spoon coriander powder
1 tea spoon jeera powder
1 tea spoon gram masala powder
1 tea spoon red chilli powder
1 tea spoon jeera
1/4 tea spoon hing
1 strand curry leaves
1/2 tea spoon haldi1 tea spoon amchur powder
Salt to taste
3 table spoon oil
Preparation:
- Boil aloo , peel and cut into big pieces
- Wash and chop methi leaves finely
- In a bowl mix all the masala ingredients listed above including salt with 1 table spoon of oil
- Mix the aloo pieces with the masala well and rest for ten minutes
- Meanwhile heat the remaining oil in a pan and add jeera
- When jeera splits add hing, haldi and curry leaves
- Add the chopped methi leaves and cook on a low flame till methi leaves slightly changes its colour
- Add the aloo masala mixture and mix well
- Cover and cook for ten minutes on low flame
- Serve with hot roti
