This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Yellow Pumpkin Halwa

This halwa is a simple, colourful, delicious halwa made with yellow pumpkin during festivals. Try this yummy halwa this Navaratri.

Ingredients: Serves 5
  1. 3 cups yellow pumpkin
  2. 11/2 cup sugar
  3. 2 table spoon fine sooji
  4. 1 cup milk
  5. 1 cup ghee
  6. Pinch of saffron
  7. 1 tea spoon cardamom powder
  8. 2 table spoon blanched almonds

Preparation:
  1. Peel and grate yellow pumpkin
  2. Soak saffron in 2 tea spoon of milk
  3. In a pan heat 2 table spoon ghee and sauté the sooji on low flame for two minutes
  4. Add the grated pumpkin and sauté for 2-3 minutes
  5. Add milk and cook on low flame till pumpkin is cooked well
  6. Add sugar and keep stirring
  7. Add ghee and continue stirring till the ghee leaves the sides and a mass is formed
  8. Add the soaked saffron, cardamom powder and mix well
  9. Put off the flame and garnish with blanched almonds
  10. Serve hot
