Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Mallige Iddli

Mallige in kannada means jasmine. This is an apt name for this super soft iddli. I saw this recipe in a blog sometime back and was wanting to prepare it. I do not remember the name of the blogger but I would like to congratulate her for this great recipe. The iddli's are extremely soft and just melts in the mouth.

Ingredients:
4 cups raw rice
1 cup urad dal
1 cup beaten rice (Poha)
1/2 cup sabudana
Salt to taste
1/2 tea spoon cooking soda (optional)

Preparation:
  1. Soak all the ingredients separately for two hours
  2. In a wet grinders first grind urad dal till frothy adding enough water
  3. Now add the rice, poha and sabudana and grind to a fine paste
  4. The consistency of the batter should be of  iddli batter
  5. Add salt and ferment overnight
  6. Next day morning add the cooking soda, if choose to add and mix well
  7. Pour on to the iddli mould and steam for 7-8 minutes
  8. Serve this super soft iddli  hot with  coconut chutney
