This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Paper Dosa

Paper dosa is ultra thin, crispy dosa. It is so thin and crispy that it can be rolled like a paper. Enjoy this yummy dosa with coconut chutney

Ingredients:
2 cups boiled rice or 3 cups raw rice
1 cup split yellow moong dal
1 cup urad dal
1/4 cup rice flour
1/4 cup maida
1 tea spoon methi seeds
1/4 cup beaten rice (Poha)
Salt to taste
Oil for making dosa
 
Preparation:
  1. Soak urad dal, and moong dal together for three hours
  2. Soak rice and methi seeds together for three hours
  3. Soak Poha for 15 minutes
  4. Grind urad dal and moong dal to a fine paste
  5. Add the rice , Poha and grind  till the batter is smooth
  6. Add salt and ferment  the ground batter overnight
  7. Mix maida and rice flour, add water and make a smooth paste and ferment overnight
  8. Morning,add the  rice flour, maida mixture to the batter and mix well
  9. Heat a dosa thava (griddle)  and spread  the batter into thin dosa (take care not to overheat the tava)
  10. Add oil around the dosa
  11. When crisp roll the dosa like paper
  12. Serve with coconut chutney
