This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Green Tomato Rice


Green Tomato Rice

Tangy, spicy, delicious green tomato rice makes a good lunch box menu. The coconut milk added to this rice enhances the taste of the dish. Serve this rice with cucumber raita'

Ingredients:
11/2 cup basmati rice
8 small green tomatoes
6 red fresh chilies
1 cup finely chopped spring onions
1/4 cup fresh finely chopped green garlic
2 table spoon oil
1 tea spoon grated ginger
1 tea spoon shahjeera
1 spoon sugar
Salt to taste
2 bay leaves
1/2 cup fresh/store bought coconut milk
1 tea spoon biryani masala

Preparation:
  1. Wash and soak basmati rice for half an hour
  2. Cut each tomato into four pieces
  3. Chop chilies
  4. Heat oil in a cooker and put bay leaves and shahjeera.
  5. When shahjeera splits add the grated ginger, chilies, chopped spring onions and chopped green garlic, salt and sauté well
  6. Add the cut green tomatoes, sugar and biryani masala and mix well
  7. Add the coconut milk, 1 1/2 cups of water, mix well and put the lid of the cooker and cook for two whistle
  8. Serve with cucumber raita
