Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Garlic Chakkuli

The strong and rich flavour of garlic and Badge chillies is what makes this chakkuli symptoms. This chakkuli tastes great with a cup of tea/coffee to enjoy for an evening snack.

Ingredients:
3 cups rice flour
1 cup besan flour
2 table spoon roasted channa powder (hurikadale)
10 badige chilli
10 pods of garlic
2 table spoon hot oil
1 tea spoon til (sesame seeds)
1 tea spoon jeera
Salt to taste
Oil for frying chakkuli

Preparation:
  1. Soak badige chilies in warm water for half an hour
  2. Grind the soaked badige chilies and garlic to a fine paste adding little water
  3. In a mixing bowl mix rice flour, besan flour, roasted channa dal powder, salt, ground chilli and garlic paste, til, jeera,  hot oil and mix well.
  4. Make a stiff dough adding  required quantity of water
  5. Heat oil for frying
  6. Put required amount of dough into the chakkuli press and  directly press the chakkuli into the hot oil
  7. Fry till the oil stops to sizzle
  8. Store in air tight container
