This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Chocolate Cake with fudge icing


Chocolate Cake with fudge icing
                                                             

This yummy Chocolate Cake is dedicated to my elder son Abhijith and daughter-in-law Dwitiya on their first Deepavali together and also to my younger son Vishwajith on his birthday.


Ingredients:
2 cups maida (All purpose flour)
2 teaspoon baking powder
1/2 tea spoon baking soda
2 cups sugar
2 eggs
3 table spoon cocoa powder
1/2 cup vegetable oil
2 tea spoon vanilla extract
1/4 cup black resins
1 cup boiling water
1/2 cup butter milk

For Fudge  icing:
1 cup sugar
1/2 cup cocoa powder
1/4 cup milk
1/4 cup butter
1 tea spoon vanilla extract

1 cup sliced almonds

Preparation:
1. Preheat the oven to 180 degree centigrade.
2. Grease the baking dish with oil.
3.Beat the eggs well till frothy
4. Sieve together maida, baking powder, baking soda .(dry ingredients)
5. In a big mixing bowl combine the sugar, beaten eggs, cocoa powder, oil, vanilla extract and resins and mix well in one direction. Add the boiling water and mix well. Now add the butter milk and mix well.(wet ingredients)
6.Slowly combine the dry ingredients and the wet ingredients and  mix lightly.
7. Pour the cake into the greased baking dish and bake in the preheated oven for 40 minutes
8 A knife inserted should come out clean which indicates that the cake is completely baked.
9. Cool the cake well.

 Fudge  icing:
1. In a pan combine the sugar, cocoa powder, milk, butter, and vanilla extract.
2. Heat the mixture on a low flame , bring it to a boil and cook for another one minute.
3. Put off the heat and  beat the icing well for 3 minutes or till the icing thickens.
4. Spread evenly over the cooled cake.
5. Spread evenly the sliced almonds on the icing.
5. Rest the cake for 20 minutes and cut into desired shape.
