This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Stuffed Baigan Biriyani

This recipe is an interesting combination of baby eggplants stuffed with masala and cooked with rice. Treat your family to this unique biriyani

Ingredients:
2 cups basmati rice
8 green baby egg plant
1 cup roasted peanuts
1/4 cup roasted til
6-8 garlic pods
1 tea spoon jeera
1 strand curry leaves
1 table spoon of chopped coriander leaves
1 tea spoon jaggery
1 table spoon dry coconut gratings
1 tea spoon garam masala
1 tea spoon red chili powder
1/2 tea spoon haldi
4-5 cloves
1 inch cinnamon
2 bay leaves
2 table spoon oil
2 1/2 cups water
Salt to taste
Preparation:
1. Soak basmati rice for half an hour , drain and set aside
2. Make four slits on the baigan taking care not to break them. Keep them soaked  in water
3. Grind roasted peanuts, roasted til, garlic, jeera, curry leaves, jaggery, dry coconut, coriander leaves, garam masala, red chili powder and salt coarsely without adding water.
4. Stuff this masala in the slit baigan
5. Heat oil in the cooker and add bay leaves, cloves and cinnamon and saute for a minute.
6. Add the rice , water, haldi and salt
7. Cover and cook till rice is half cooked
8. Slowly put the stuffed baigan into the half cooked rice ,cover and cook till rice is well cooked.
9. Serve hot with nay raita.
