Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Ragi Rotti

Ragi (Finger millet ) rotti a very nutritive and filling breakfast dish is unique to the state of Karnataka.This popular breakfast dish is an excellent source of iron.


Ingredients:
3 cups ragi flour
2 very finely chopped onion
5 finely chopped green chilies
2 strands of finely chopped curry leaves
1/4 cup finely chopped coriander leaves
1/2 cup grated fresh coconut (optional)
1 spoon sugar
salt to taste
Warm water to knead the dough

Preparation:
1. In a mixing bowl mix finely chopped onion, green chilies, curry leaves, coriander leaves, coconut, salt, sugar and mix well.
2. Now add the ragi flour and mix well.
3. Knead the dough adding  warm water to form a soft dough .
4. Divide the dough into medium size ball.
5. Take a parchment paper or greased banana leaf , place the dough in the center.
6. Grease your finger and start rolling the ball out into flat bread from center reaching the edge till uniform thickness is reached.
7. Heat a griddle/tawa and slowly place the rotti on to the tawa and slowly peel off the paper/leaf .
8. Put oil on the rotti and cook on both sides.
9. Serve hot with white butter and chutney.
