This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Plain Greek Yogurt

Greek yogurt is made by straining out the regular yogurt . It makes the yogurt that is thicker, creamier and tangiers than regular yogurt. Plain Greek yogurt has less sugar and more protein than regular yogurt. But regular yogurt has calcium that is required for strengthening the bones. Greek yogurt can be flavoured by adding fresh fruits to it .It can be made into dips and different flavoured shrikand.

Ingredients: (makes three cups)

1 litre whole milk
1 table spoon fresh culture (use any home made yogurt)

Preparation:

Instant pot 
  1. Set the yogurt using the instant pot. Pour the milk into the instant pot and add the culture and mix well
  2. Bring it on to yogurt mode and set the instant pot for 8 hours
  3. After the yogurt is set pour it on to the Greek yogurt maker .
  4. Cover the Greek yogurt maker and set it in the refrigerator for 8 hours
  5. Thick , creamy , tangy yogurt is ready to season with fruits or can be eaten plain

Traditional method:
  1. Boil the milk in a thick bottom vessel
  2. When the milk is  luke warm add the culture, mix well and leave it in a warm place to ferment. (This should take around 4-5 hours depending on the weather)
  3. After the yogurt is set pour it on to the Greek yogurt maker .
  4. Cover the Greek yogurt maker and set it in the refrigerator for 8 hours
  5. Thick , creamy , tangy yogurt is ready to season with fruits or can be eaten plain
