This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Mango Kesari Bath

Kesari bath or sooji halwa is made with different versions like adding pineapple, banana, green apple etc. Since it is the mango season I have used ripe mangoes to make mango kesari bath. Serve this hot and watch your family asking for more.

Ingredients: (serves 6 people)
2 cups rave
3 cups sugar
2 cups ghee
2 cups mango purée
1/4 tea spoon salt
1 tea spoon elachi powder
3/4 cup assorted dry fruits like kaju, badam and kismis
1 tea spoon pure kesar
4 cups water

Preparation:
  1. Soak kesar in 1 table spoon milk
  2. Heat 1 table spoon ghee and roast all the dry fruits and set aside
  3. Heat a pan and dry roast rave till a nice aroma arises
  4. Add 1 cup ghee to the roasted rave  and saute for a minute and set aside
  5. In a pan add 4 cups water, soaked kesar, salt and bring it to a boil
  6. Add the mango pure and stir for a minute
  7. Add the roasted rave and mix well and cook on low flame till the rave cooks well
  8. Add the sugar and mix well
  9. Add the remaining ghee and keep stirring till ghee leaves the side
  10. Add the elachi  powder and the roasted dry fruits and mix well
  11. When we touch the kesari with a finger it will not stick to the finger and this indicates that the kesari bath is done
  12. Serve hot or warm
