This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Baked Cajun, Pear Stuffed Red Bell Pepper

Baked Cajun, Pear Stuffed Red Bell Pepper, is a combination of tangy, and sweet taste with a crunchy texture. Serve this dish as a side dish or as a starter.

Ingredients: (Serves four)
4 red bell peppers
250 gm. cherry tomatoes
1 pear
3-4 garlic pods
1 table spoon lemon juice
1 tea spoon Cajun spice
1 tea spoon thyme
1/2 tea spoon Italian spice
1/2 cup feta cheese
2 table spoon olive oil
Aluminium foil
Salt to taste
Preparation:
Pre heat oven to 180 degree
Cut red bell pepper into half, length wise and scoop out the seeds
Cut the cherry tomatoes into half
In a mixing bowl mix cherry tomatoes, chopped pear, crushed garlic, lemon juice, Cajun spice, thyme, Italian spice, feta cheese and salt.
Stuff this mixture into the halved red bell pepper
Sprinkle olive oil on the stuffed bell peppers
Arrange on a greased baking tray and cover with aluminium foil
Bake in the oven for 20 minutes
Remove the aluminium foil and again bake for another 10 minutes
Serve as a side dish or as a starter.
