This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Green Garlic Bindi

This dish, flavoured with fresh green garlic and spices is an excellent accompaniment with either roti or polka. Enjoy as a side dish with rice and dal too.

Ingredients: (serves three)

  1. 500 gm bind
  2. 1/2 cup finely chopped green garlic
  3. 1/2 cup finely chopped spring onions
  4. 2 table spoon oil
  5. 4 finely chopped fresh red chilies
  6. 1 tea spoon ajwain
  7. 1 tea spoon amchur powder
  8. Salt to taste

Preparation:
  1. Wash and pat dry bind and cut into thin strips
  2. Heat oil in a pan and add ajwain
  3. When ajwain changes colour add the chilies and sauté for a minute
  4. Add the finely chopped green garlic and spring onions and sauté on low flame for two minutes
  5. Add the cut bind, mix well, cover and cook for five minutes
  6. Add the salt and amchur, mix well and cook for another five minutes
  7. Serve hot with roti.
