Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Coconut Parata


Coconut Parata

Coconut is one of the ingredients found in most of the South Indian house hold. Coconut parata makes a very good breakfast item. Serve this parata with coconut chutney and enjoy.

Ingredients:
2 cups wheat flour
1 cup freshly grated coconut
3 green chilies
1 inch ginger
1 strand curry leaves
1/4 tea spoon hinge
1 tea spoon jeera
1/4 cup finely chopped coriander leaves
Salt to taste
Oil for frying parata
Preparation:
  1. Grind to a fine paste green chilies, ginger, hing, curry leaves, jeera adding little water
  2. Mix this ground paste, wheat flour, coconut, coriander leaves and salt
  3. Make a smooth dough adding required amount of water
  4. Rest the dough for 20 minutes
  5. Pinch 1 big lemon size dough and roll into parata
  6. Heat a tava and cook the parata on medium heat on both the sides adding oil till golden brown
  7. Serve parata hot with coconut chutney
