Mangalore Bun

Mangalore Bun
This is an authentic Udipi- Mangalore dish. Mildly sweet, deep fried whole wheat/maida banana poori is served as breakfast along with coconut chutney.

Ingredients:
2 cups wheat flour or maida
2 ripen banana
1/2 cup sugar
1/2 tea spoon salt
1/4 tea spoon cooking soda
1 tea spoon jeera
1/4 cup curd
oil for frying the bun

Preparation:
1. In a wide vessel mash banana
2. To this add wheat flour/maida, salt, sugar, soda and jeera and mix well
3. Add curd and knead a tight dough (add little water if required)
4. Rest the dough overnight covered (for 8 hours)
5. Make small balls of the dough and roll thick say 5-6 cm diameter
6. Heat oil and deep  fry these buns one at a time till golden brown
7.Serve with coconut chutney
Note: These buns stay fresh for 3-4 days when stored in airtight containers. They taste good without any accompaniments too.
