However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Stuffed Baigan Masala

A vegetable treat, stuffed baigan is made in many ways. It is a combination of different spices stuffed in baigan, a true culinary treat.


Ingredients:
12 small green or purple baigan (brinjal)
2 medium size onion
1/2 cup fresh coconut
5 garlic pods
1 inch ginger
3 medium size tomato
1 spoon tamarind extract
1/2 spoon haldi
1 spoon red chili powder
salt to taste
1 spoon mustard seeds
 1/2 spoon methi seeds
1 strand curry leaves
2 table spoon oil.
1/2 cup chopped fresh coriander leaves.

Preparation:
1. Wash and make four slit  in the baigan length ways without halving them.
2. Chop one onion, tomatoes, garlic, ginger and grind them along with fresh coconut,salt, red chili powder, and tamarind to a fine paste.
3. Chop finely another onion
4. Stuff the brinjal with the ground masala.
5. Heat oil in a pan add mustard, methi seeds, haldi, curry leaves, when mustard splits add the chopped onion and saute till transparent.
6. When onion turns transparent add the stuffed brinjal ,sprinkle some water cover and cook till baigan gets cooked well.
7. Garnish with fresh coriander leaves.
8. Serve hot with rice or roti.
