Bottle gourd peanut curry |
A lip smacking bottle gourd curry with freshly ground peanuts. A very good combination with hot rice or roti.
Ingredients
2 cups chopped, bottle gourd.
1 big onion
2 tomatoes
4 garlic pods
1/2 cup roasted peanuts
1 tea spoon red chilli powder
1/2 tea spoon haldi
1 table spoon oil
1 tea spoon mustard seeds
1 strand curry leaves
1/4 cup chopped coriander leaves
salt to taste
Preparation:
1. Peel and chop bottle gourd into small pieces
2. Finely chop onion
3. Finely chop tomatoes
4. Powder coarsely peanuts along with garlic and red chilli powder.
5. Heat oil in a thick bottom pan, add mustard, curry leaves and haldi.
6. When mustard cracks add the onions and saute for a minute.
7. Add the tomatoes and salt and saute till tomato becomes soft.
8. Now add the bottle gourd pieces and mix well. Cover and cook on slow flame till bottle gourd cooks and becomes transparent
9. Add the ground peanut, garlic and chilli powder and mix well.
10. Take off the heat and garnish with coriander leaves
