Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Zucchini Bread

Zucchini Bread
Baking bread at home is very easy. It is healthier too as it contains no preservatives. One can't resist the smell of the baking bread !The whole house smells wonderful when it is in the oven !!


Ingredients:
1 medium size Zucchini
1/2 cup butter milk
1/2 cup vegetable oil
2 eggs
1/2 teaspoon vanilla extract
1 1/2 cup maida (all purpose flour)
1 cup sugar
1/4 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup of walnuts

Preparation:
1. Pre heat the oven to 350 degree F or 175 degree C
2. Grease the bread loaf pan.
3. Wash and grate  the zucchini without seeds.
4. Squeeze the excess water out of zucchini.
5.Combine together butter milk, vegetable oil, vanilla extract,  eggs ,zucchini and mix well to combine.(wet ingredients)
6. Combine the flour, sugar, cocoa powder, baking powder, baking soda and salt in a bowl.(dry ingredients)
7. Now combine the wet and the dry ingredients little by little mixing very lightly.
8. Now mix in the walnuts
9. Transfer the mixture into the greased loaf can.
10. Bake for 1 hour or till a knife inserted in the loaf comes out clean.
