Carrot Chutney
Ingredients:
2 carrots
1/2 cup fresh coconut
5-6 green chills
1 tablespoon tamarind extract
1/4 spoon hing (asafoetida)
salt to taste.
For tadaka:
1 tea spoon oil
1/2 teaspoon mustard
1/2 teaspoon urad dal
1 dry red chilli
1 strand curry leaf
Preparation:
1.Wash and grate the carrots.
2. Grind the carrots with coconut,chillies,tamarind extract,hing and salt
3. Prepare tadaka with oil, mustard, urad dal, red chilli, and curry leaf. When the mustard starts to pop ,put off heat and add the tadaka to the chutney.
4. Serve with hot rice.
