Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Coriander Rice


Coriander Rice
Coriander rice is a simple, flavorful and quick recipe with fresh coriander leaves. Coriander leaves is a herb, available in abundance in India through out the year.

Ingredients:
2 cups Basmati Rice soaked for half an hour
2 cups packed fresh coriander leaves
4-5 green chilies
1 inch grated ginger
2 table spoon oil
1 tea spoon jeera
1 table spoon cut cashews
3 medium size onion finely chopped
2 1/2 cups water
Salt to taste

Preparation:
1.Grind together to a fine paste ginger, coriander leaves and green chilies.
2.In the cooker heat oil, add jeera ,when jeera splits add the cashews.
3. When cashews turn golden brown add the finely chopped onions, salt  and saute till onions turn transparent.
4. Add the ground coriander paste and mix well.
5. Add the basmati rice and mix well.
6. Add 2 1/2 cups water and put the cooker lid on and cook for three whistles
7. Serve with any raita.
