This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Shankarpali

These deep fried nice,crispy, crunchy,savory diamond shaped snack is an excellent accompaniment with a cup of tea/coffee especially on a rainy /chili day.

Ingredients:
2 cups maida (refined flour)
1 big onion
5-6 green chilies
1 spoon jeera
salt to taste
1 table spoon oil
oil for frying

Preparation:
1. Chop onion and grind with green chilies and jeera to a fine paste
2. Heat 1 table spoon oil till it smokes
3. In a mixing bowl take maida, onion paste, salt and mix well
4. Add the hot oil and mix well
5. Add water and make a tight dough
6. Rest the dough for 15 minutes
7. Take a big size ball of the dough and roll into chapati
8. Using a knife or a pizza cutter cut into small diamonds
9. Heat oil and fry these diamonds till they turn golden brown
10. Remove on a paper towel to drain the excess oil
11. Cool and store in an air tight container
12. Serve with hot coffee/tea
