This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Kaju Badam pista masala

This recipe of mixed dry fruits cooked in spicy masala is a very rich and tasty dish. It taste great with roti and jeera rice


Ingredients:
1/4 cup broken cashew (kaju)
1/4 cup broken badam
1/4 cup broken pista
1 table spoon resins
2 onions
2 tomatoes
6 garlic pods
2 green chilies
1 "ginger
2 table spoon chopped coriander leaves.
1 tea spoon red chili powder
1/2 tea spoon haldi
1 tea spoon coriander powder
1/2 tea spoon red chili powder
1 tea spoon jeera powder
1 tea spoon sugar
1 tea spoon garam masala powder
2 table spoon oil
1 table spoon fresh cream
1 table spoon cashews for the gravy
1 tea spoon jeera
1 table spoon kasoori methi
Salt to taste

Preparation:
1. Heat  1 table spoon oil in a pan and add chopped onions, chopped tomatoes, grated ginger, 1 table spoon coriander leaves, garlic, green chilies and 1 table spoon cashews and saute till onion turns transparent
2. Grind the above mixture to a fine paste
3. In a pan heat 1 table spoon oil add jeera. When jeera turns colour add the ground masala, haldi and saute till oil leaves the sides of the pan.
4. Now add the chili powder, coriander powder, jeera powder, sugar, salt & garam masala and mix well.
5. Add the broken dry fruits and cover and cook on a low flame for 2-3 minutes.
6. Add the cream, kasoori methi, and the coriander leaves and mix well.
7. Serve hot with roti
