Coconut Kodubele |
I had earlier posted kodubele in my blog. This is yet another variety of kodubele with coconut. Enjoy this snack with a cup of hot coffee or tea
Ingredients:
2 cups rice flour
1/2 cup coconut
8 red badge chilies
1 tea spoon jeera
1 tea spoon coriander seeds
1/2 tea spoon hing
1 table spoon hot smoking oil
Oil for frying kodubelePreparation:
- Grind coconut, red chilies, hing, coriander seeds, jeera and salt to a fine paste adding water
- In a mixing bowl mix the ground paste, rice flour and 1 table spoon hot smoking oil
- Knead a smooth dough adding water
- Pull out little dough, roll it to make a pencil stick shape and join the ends to form a circle and lightly press the ends to secure
- Heat the oil and deep fry these circles till golden brown and the sizzling sound of the oil stop
- Drain on paper towel
- Store in air tight containers
- Stays good for a week
- Serve with hot coffee or tea
