Coconut Kodubele

I had earlier posted kodubele in my blog. This is yet another variety of kodubele with coconut. Enjoy this snack with a cup of hot coffee or tea

Ingredients:
2 cups rice flour
1/2 cup coconut
8 red badge chilies
1 tea spoon jeera
1 tea spoon coriander seeds
1/2 tea spoon hing
1 table spoon hot smoking oil
Oil for frying kodubele

Preparation:
  1. Grind coconut, red chilies, hing, coriander seeds, jeera and salt to a fine paste adding water
  2. In a mixing bowl mix the ground paste, rice flour and  1 table spoon hot smoking oil
  3. Knead a smooth dough adding water
  4. Pull out little dough, roll it to make a pencil stick shape and join the ends to form a circle and lightly press the ends to secure
  5. Heat the oil and deep fry these circles till golden brown and the sizzling sound of the oil stop
  6. Drain on paper towel
  7. Store in air tight containers
  8. Stays good for a week
  9. Serve with hot coffee or tea
