Peanut Rice |
Peanut rice is a quick, easy, flavourful rice with minimum ingredients. It makes an excellent lunch box option.
Ingredients:
2 cups cooked rice
1/2 cup peanuts
3 whole red chilli
1/2 tea spoon pepper
2 table spoon fresh grated coconut2 strands curry leaves
1 tea spoon mustard seeds
1/2 spoon haldi
11/2 table spoon oil
Salt to taste
Preparation:
- Dry roast peanuts and grind it coarsely
- Heat 1/2 tea spoon oil and roast red chilies, pepper for a minute
- Grind the roasted chilies and pepper with coconut, finely without adding water
- Heat 1 table spoon oil in a pan , add mustard, curry leaves, haldi.
- When mustard splits add the ground masala and ground peanuts, salt and mix well
- Add the cooked rice and mix well.
- Serve hot
