Cheese Corn Rice |
Ingredients:
2 carrots
1 cup fresh /frozen corn
1 thinly sliced capsicum
2 thinly diced tomatoes
6-7 spring onions - finely chopped
2 cups basmati rice
2 table spoon olive oil
2 finely chopped green chilies
6-7 grated garlic
1 table spoon oregano
1 tea spoon chili flakes
6 cheese slice
Salt to taste
Preparation:
1. Soak basmati rice for half an hour, and cook adding 2 cups of water and little salt.
2. Cook finely chopped carrot and corn, salt in a microwave oven.
3. Heat oil in a pan and add finely chopped green chilies, garlic, oregano, chili flakes and finely chopped spring onions and salt. Saute for 4-5 minutes.
4. To this add the cooked carrots and corn, mix well and put off the flame.
5. Take a broad microwaveable vessel and lightly grease it at the bottom.
6..Put one layer of cooked basmati rice.
7.. Over this put one layer of cooked corn, and carrot mixture.
8.. Top this with thinly sliced capsicum,tomatoes and cheese slice.
9.. Repeat this layering till you exhaust all the rice, vegetables and cheese.
10.. Put the above layered rice in the microwave and cook till the cheese melts.
11..Serve hot with cucumber raita.
