This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Pineapple Kesari Bath

Pineapple kesari bath is an authentic Karnataka dish. The specialty of this dish is pineapple that adds both flavour and colour to the dish. It is an excellent combination with upma or karabath

Ingredients:
1 cup finely chopped pineapple pieces
2 cups rava
11/2 cup sugar
1 cup ghee
1 table spoon milk
1/8 tea spoon salt
1 spoon kesari strand
1 tea spoon cardamom powder
1 table spoon chopped cashew nuts
1/2 table spoon resins

Preparation:
1. Dry roast rava till a nice aroma arises. set aside
2, Soak saffron strands in 1 table spoon of milk
3. Roast the cashews and the resins separately  in 1 tea spoon ghee till they turn golden brown. set aside
2. Add 1/4 cup water to the pineapple pieces and cook the pineapple pieces.
3. Boil 4 cups water  in a thick bottom tava. To this boiling water slowly add  salt , roasted rava and stir taking care no lumps are formed.
4.When the rava is cooked add the sugar and the saffron strands  along with the milk and mix well.
5. Slowly add the ghee and stir well
6. Add the cooked pineapple pieces and mix well
7.Cook on low flame till the mixture leaves the side of the vessel.
8. Add the roasted cashews, resins and cardamom powder. and mix well.
9. Put off the flame and serve pineapple kesari
