Ammana adige mane in Kannada means mother's kitchen. This blog is aimed at those who love to cook simple home made food with minimum available ingredients.The style of recipes in this blog will be mostly Dakshina Kannada (Vegetarian) home made food. However I intend to share recipes other than authentic Dakshina Kannada cooking which include cuisines from Andhra, Tamil Nadu, Maharashtra, Punjab...There is also something for those who like cuisine from across the sea.

Kaai Vade



                               Kaai Vade                                                               
This delectable crisy vade made of minimum ingredients is a great tea time snack. Kaai vade ( tangina  kaai in kannada means coconut) is an authentic udidpi delicacy.


Ingredients:
2 cups red rice ( red boiled rice)
1 tea spoon methi seeds (fenugreek seeds)
2 cups fresh coconut gratings
2 strands curry leaves
4 green chilies
Salt to taste
Oil for frying vada.

Preparation:
1. Soak red rice and methi seeds for 6-8 hours
2. Grind  soaked rice and methi seeds with coconut  to a fine vada consistency adding very little water.
3. Finely chop chilies and curry leaves and mix into the batter along with salt.
4. Heat oil in a pan . Make small balls of the batter and lightly press it and fry in oil till vade turns golden brown in colour.
5. Serve with hot coffee or tea.
