Dum Aloo |
This recipe is inspired by my niece Shilpa Manjunath.
Ingredients:
500 gms baby potatoes (Aloo)
3 medium size onions.
1 tea spoon jeera(cumin seeds)
1 tea spoon souf (fennel seeds)
5-6 pods of garlic
1 cup tomato puree
1 table spoon red chilli powder
1 tea spoon coriander powder
1 teaspoon sugar
Salt to taste
1/4 cup of oil.
1/4 cup chopped fresh coriander leaves /kasoori methi.
Preparation:
1. Wash and peel the potatoes
2. Prick the potatoes with a fork and soak in warm salt water for 30 minutes.
3. Grind together jeera, souf, red chilli powder, and garlic to a fine paste
4. Mix this paste with tomato puree, sugar , salt, coriander powder and mix well.
5. Drain the potatoes and mix it with this masala and marinate for 6 hours.
6. Heat oil in a heavy bottom kadai ,add finely chopped onions and fry for two minutes.
7. Add the marinated potatoes along with the masala and mix well.
8. Cover and cook the potatoes on low heat.
9. Keep mixing every five minutes and add more oil if very dry.
10. Cook till the potatoes are done but firm.
11. Garnish with fresh coriander leaves or kasoori methi.
